Veg Manchurian gravy .. (Mixed vegetable balls in manchurian Gravy)

Today was a cloudy day in Galway, which is quite common. After a last weeks heatwave today finally the weather was soothing and relaxing. I was having a strong urge to have something chinese. I decided to make chilli chicken. Then sadly I suddenly remembered I had no chicken in my pantry. Hence, to curb my urges I decided why not try something different. I decided to try veg manchurian. It was my first time making it I was quite unsure how it will turn out.

               With the assurance  and help of my (husband) HB I finally took a leap of faith and decided to give it a go..And believe me it was mouth watering.

Ingredients for the Balls - (serves 4)

 Cauliflower/ Cabbage -  approx 100 gm ( I used cauliflower as I was running out with cabbages. But it worked out perfect)

 Carrot - 2 medium sized

 Peas - 1/4th cup

 Spring onion greens - around 100gms

 Potato - 1 medium sized

 All Purpose Flour - 2tbsp

 Cornflour - 2 tbsp

 Capsicum - 1

 Chilli - As per your taste, but I added a 2 green chilli

 Black Pepper Powder

Dark Soy Sauce - 1 tbsp  

 Salt


Instead of grating individual veggies I decided to put everything in the food processor.

I used the chopper blade in the food processor and I chopped the  veggies really small .

After this take the mixture out from the food processor in a bowl. Add salt and mix it well. The salt here will help to release the water from the veggies. Let the veggies rest for 10-15 min. After 15 min squeeze the water from the veggies. Save the water for the gravy or if you wish you can throw it. Now add the flour and cornflour to it along with black pepper powder  and soy sauce. Mix it well. Form small lime like balls from this mixture.

Heat pan with oil for deep frying these balls. Fry these balls in medium heat till they are deep fried . Fry the balls in small batches to avoid over crowding your pan. Take them out in a bowl after they fried well.

Ingredients for the gravy -

 Dark soy sauce -  2 tbsp

 Onion - 1 medium cut into small squares

 Garlic -

 Ginger -

 Spring onion -

 Lime juice  - 1/2 tsp

 Chilli sauce -1 tsp

 Tomato ketchup -  1 tbsp

 Cornflour - 1 tsp

 Water - 1 cup (approx)


Process for the gravy -

        Heat oil in a pan. Add the onion,ginger and garlic. saute them for 1 min in medium flame. Add the spring onions. Reduce the flame to low and saute the spring onions again for a minute. Add 2 tbsp of dark soy sauce. After this add the lime juice, chilli sauce and the tomato ketchup. Mix them well and remember to keep the flame to low otherwise it will burn.

Make a paste of cornflour and add to the pan. Stir it well. Add 1/2 cup of water to it and stir it well to mix well. Increase the flame to medium and cook it for a couple of minutes. Add water to the mixture if the gravy is too thick. Adjust the thickness of the gravy as per your choice. Turn of the heat now. Add the fried manchurian balls to the gravy and mix it slowly with the gravy. After the balls are well coated with gravy take it out in a bowl. Serve hot with plain rice or fried rice. We had it with hot plain rice. It was awesome ... 😋
